Light Fruit Cake

Ingredients:
250gm butter
150gm castor sugar
Sieve together 3x
240gm plain flour
2tsp baking powder
4 eggs
1 tsp vanilla essence
Rind of 1 orange
Juice of 1 orange
250gm dried mixed fruits
Method:-
1. Combine dried mixed fruit, juice and orange rind and keep aside.
2. Beat flour, sugar, eggs, butter and vanilla essence together.
3. Then add the mixed dry fruit- juice -orange rind mixture.
5. Pour into a 9 inch tray and bake for 1 hour – 180C.
(Oven has to be pre-heated 10mins before)
